Recipe of the Week: Spinach Dip

Happy first day of summer! It’s a busy time of year and there will be lots of events happening — pool parties, birthday parties, wedding showers, baby showers and a whole lot more. This week we’re sharing a quick and easy spinach dip recipe that you can whip up and bring with you wherever you go. Guests are sure to love it!

Ingredients

1 c. chopped fresh spinach
1 c. low-fat cottage cheese
1/2 c. chopped green onions
1/2 c. lite mayonnaise
1 Tbsp. reduced sodium soy sauce
1 clove garlic, minced
Sweet red pepper strips

Directions

Combine first 6 ingredients in electric blender. Process until smooth. Cover and chill. Garnish with red pepper strips. Serve with an assortment of crackers, pumpernickel bread loaf or raw vegetables. Yields 1  2/3 cups.
